Pompeii represents an exceptional laboratory for the analysis and study of patterns of production, trade and consume in Antiquity as exemplified in this paper that illustrates results of a plurennial research project named “From fishing to garum in Pompeii and Herculaneum. The exploitation of marine resources in the Vesuvian area”, carried out by an Italian-Spanish team. Discussion concentrates on the interdisciplinary analysis of the building known in modern literature as Garum Shop (I, 12, 8) at Pompeii, in order to reconstruct patterns of exploitation of marine resources in an urban context in 79 AD. Results of archive research, stratigraphic investigations, archaeozoological and archaeometric analyses are presented with the aim to propose a model of space organization for the production and sale of fish products at Pompeii.
