The paper illustrates results of a pluriannual research project focused on the exploitation of marine resources in the Vesuvius area, carried out by an Italian-Spanish team. Discussion will concentrate on the analysis of the building known in modern literature as « Garum Shop » (I, 12, 8) at Pompeii in order to reconstruct space organization and marine resources exploitation in an urban context dating to 79 A.D. Results of archive research, stratigraphic investigations, archaeozoological and archaeometric analyses will be presented and discussed, with the aim to propose a model of space organization for the production and sale of fish products.
